Flavours reminiscent of Turkish delight! Milk chocolate, sweet floral aromatics, and highly morish.
This is coffee has known rain. But then again, that’s because it’s from Guatemala’s version of the rainforest. Put it this way: if Finca Santa Paula was the UK, conversation would never progress past moaning about the weather. But it isn’t, and it just so happens that all this humidity and precipitation makes for a rather special coffee.
However, because the cooler air temperature can spoil the coffee post-harvest, and to ensure we end up with a coffee at the peak of its powers, we pick and ship – all the way south to our buddy in Santa Clara, Antigua, Ricardo Zelaya. He dries ‘em and then it’s down to us to do what we do.
As for our Guatemalan growers, well we already donate a percentage of the retail sales of our Pocola coffee, but we have also begun to look at expanding our work with them, putting a particular focus on developing new varieties to really make the most the unique climate conditions.
