ASOPACAFA is not just a crazy-ass acronym*. Well, it is, but thankfully it’s not just that. More importantly, it’s an 84-strong co-op from Santa Rita, nestled deep in the Columbian Andes.

It’s a difficult place to grow coffee. What with the guerrilla warfare, poor infrastructure and pests such as rust** and berry borer to contend with, you’ve got to tip your hat to these guys. They’ve really gone all out to grow the good stuff.

But now a designated ‘post-conflict’ zone, we’ve got the chance to source and share some really exceptional coffee. We started with a Microlot selection last year, but now we’re back for the Roast-to-Order edition. What’s special about this one isn’t just the unique geography of the coffee growth, but the process that producer Luis Andrade has perfected. By deliberately holding the pulped cherries for 72 hours before washing, the beans get imbued with a special, boozy sweetness that’ll get you drunk on life***.

Oh, and this is a one-sack wonder – so once it’s gone it’s gone!
