This coffee is all about one inspirational woman, Delmy Regalado. As well as running the Cocafelol co-operative where the beans are processed, washed and dried, she also runs a women’s co-operative in the local town, mentors women at a local dry mill, and campaigns all over the world as head of the International Women’s Coffee Alliance for Honduras. Phew. Sounds exhausting.
As Delmy balances so many activities and passions, it’s no surprise the coffee she produces is beautifully balanced too. In keeping with the typical Honduran profile of acidity increasing at altitude, this is a truly flavourful and versatile single origin. What’s more, the byproducts are used to produce organic fertiliser to enrich the local environment.
Expect chocolate enlivened by sharp mandarin and raspberry. An inspirational and individual flavour profile from an inspirational and individual individual. Makes sense, really.
