What are mycotoxins, then?

Mycotoxins are natural toxins produced by mould. They can sneak in if coffee cherries or beans are dried or stored in poor, damp conditions.

They’re not usually an immediate danger, but long-term exposure isn’t ideal - it can stress your system, irritate digestion or trigger sensitivities. Basically: not something you want swirling about in your morning mug.
