This lot comes straight from
the Mercedes hills in southern Honduras, near the borders of Guatemala and El Salvador. It is produced by CAFESMO, a cooperative of more than 280 smallholder farmers who joined forces with a shared commitment to diversity and quality.
Grown between 1,200 and 1,600
metres, this crop benefits from rich soils and a diverse microclimate that naturally shapes its character. Combining Pacas, Lempira, and Parainema varieties, these ideal growing conditions lay the groundwork for a highly expressive and perfectly balanced cup.
The processing here takes
serious graft. After being delivered to the cooperative's own mill on the same day of picking, the cherries are density sorted and put through a controlled 10 to 12-hour fermentation. They are then patio dried for several days before
being moved to raised beds. It is a demanding process that absolutely pays off, locking in bright citrus notes, ripe fruit sweetness, and a creamy body.

Our coffees are graded 84+ on the SCA scale, meaning clean, complex, high-quality beans that taste a cut above your supermarket shelf. Every batch is traceable and small-scale - often from a single producer or a group of smallholder farmers. Some months you’ll get a single origin, other times a carefully crafted blend - always roasted to bring out its best flavour.

Whatever your brew method, there’s a grind that fits best.
Coffee resting refers to the time freshly roasted beans need to reach a stable state before brewing. Straight after roasting, beans release CO₂, which can get in the way of proper extraction and mute the flavours.
As a rule of hoof:
• Filter brews (like V60, Clever Drip, AeroPress or cafetière) are usually ready after 3–7 days.
• Espresso prefers a bit longer - around 7–14 days.
Darker roasts settle faster. Lighter ones take their time. A little patience pays off - once rested, the flavours even out, the sweetness shines, and the taste comes through just right.
These are just guidelines - every coffee’s got its own personality. Some are friendly and open up right away. Others are a bit more stubborn about showing their best side. Timing (and your own taste) might vary, so be patient, be curious, and have a bit of fun experimenting.

On a 4-week cycle, deliveries don’t line up exactly with calendar months. That means there’s occasionally a crossover where the same Pick lands twice.
