Mule's Pick El Corozo El Salvador
Stone Fruits, Caramel & Chocolate
An exceptional honey processed coffee from El Corozo, high on the slopes of the Santa Ana volcano, El Salvador, only available while stocks last.
This lot comes straight from El Corozo, a farm set high on the slopes of the Santa Ana volcano in El Salvador. It is managed by fifth-generation coffee producer Fernando Lima, who combines deep agricultural heritage with a commitment to quality. Organic and entirely shade-grown, it is proper processing with a focus on long-term sustainability.
This month's coffee comes from the Tegu Factory, set in the fertile foothills between Mount Kenya and the Aberdare Range. Grown in rich volcanic soil at 1,700 metres, this is a fully washed Kenyan crop that is wide awake and full of life.
It is produced under the Tekangu Farmers' Cooperative Society, supporting around 1,200 local smallholders. The altitude brings a cooler climate, slowing the ripening of the cherries. This extended growth period concentrates the sugars and acids, delivering the bright, citrus-forward profile Kenyan coffees are famous for.
After a meticulous hand-sort and initial fermentation, the beans are soaked in clean water for a full 24 hours — a demanding extra step that locks in pure cup clarity and brightness before drying.
